It represents the essence of what I love about French cuisine, taking something overlooked and elevating it to greatness.

Its a long and technical process but the result is one of the best sausages iv ever had let alone made

Quickly a protective flor yeast developed on the surface of the cider and was left for ten months before bottling for a secondary fermentation
