They had been doing small experiments with neutral spirits, light whiskey, and ryeconic, but nothing was quite right so they decided to try it with the 36%, which they use with the honey, and it was phenomenal. You almost get a suggestion of the sweetness of mezcal, but its still definitely bourbon.
